Med 25 dages maceration p\u00e5 skallerne og vinificering i st\u00e5ltanke er det lykkedes Stefano at udtr\u00e6kke den helt rigtige m\u00e6ngde frugt og kompleksitet fra skallerne. Udv\u00e6lgelsen er mildest talt eksklusiv og sker ved h\u00e5ndplukning af udvalgte b\u00e6r fra drueklaserne.  <\/p>\n<p>Vinstokkene er mere end 40 \u00e5r gamle og vokser i dyb lerjord med fossiler. Det giver h\u00f8j koncentration i frugten, men stadig med en dejlig friskhed. Her er svaret. B\u00e6r den med godt helbred.  <\/p>\n<p>Nebbiolo fra Canova cru med h\u00f8jere og varmere beliggenhed end andre Barbaresco cru&#8217;er. Druerne vokser i Tortoniano-jord, et bl\u00e5ligt ler med mergel og fossiler. <\/p>\n<p>Vinifikation i st\u00e5ltank med skindmaceration i 20 dage. Den f\u00e6rdige vin modnes derefter i 18 m\u00e5neder p\u00e5 5000 liters franske egetr\u00e6sfade. <\/p>\n<p>Lagringspotentiale, 20-25 \u00e5r if\u00f8lge Mauro, men 2016 udvikler sig nok p\u00e6nt l\u00e6ngere end det.<\/p>\n<p>Passer til maden, r\u00f8dt k\u00f8d, der m\u00f8der tanninerne.<\/p>\n<p>&nbsp;<\/p>\n<h4>Bergantino Barbera d&#8217;Asti 2020 af Gaudio<\/h4>\n<p><img loading=\"lazy\" decoding=\"async\" class=\"size-medium wp-image-365\" src=\"https:\/\/vinonista.com\/vinlada\/wp-content\/uploads\/2024\/09\/bergantino-167x300.jpeg\" alt=\"Bergantino\" width=\"167\" height=\"300\" srcset=\"https:\/\/vinonista.com\/vinlada\/wp-content\/uploads\/2024\/09\/bergantino-167x300.jpeg 167w, https:\/\/vinonista.com\/vinlada\/wp-content\/uploads\/2024\/09\/bergantino.jpeg 356w\" sizes=\"(max-width: 167px) 100vw, 167px\" \/><\/p>\n<p>Jeg holder aldrig op med at blive forbl\u00f8ffet over, at dette er en Barbera. En vin, der skal opleves. <\/p>\n<p>&#8220;Il Bergantino&#8221; er en hyldest til Gaudio-familien og Vignale Monferrato. Det er familiens mest historiske ving\u00e5rd. Gaudio har dyrket vin der i 5 generationer. Jorden er hvidt ler og mergel. Lidt t\u00f8rrere og varmere end i Alba. Her dyrkes Dolcetto p\u00e5 den bedste placering i vinmarken &#8220;Cascinotto&#8221;. Den blev plantet i 1984 i kompakt lerjord, og her giver Dolcetto mere kraftfulde vine, end du er vant til.   <\/p>\n<p>G\u00e6ring med naturlig g\u00e6r i st\u00e5ltank og 10-15 dages skalmaceration. Ingen filtrering eller klaring.
